As I was cleaning through my baking supplies, I found an opened bottle of molasses and decided to use it up by making some Christmas season cookies. I love this molasses cookie recipe! The cookies spread out into a thin layer and they really are very soft and chewy. I threw some dark chocolate chips into half the batch and it added a nice contrast to the sweet cookie. These are the perfect cookies for ice cream sandwiches - thin and chewy, yet firm enough not to crumble apart when you take a bite.
